Scientific name - Diospyros virginiana
American persimmon (Diospyros virginiana) is a deciduous tree native to the eastern United States and parts of Mexico. The bark is a grayish color, with deep vertical furrows. The leaves are oval-shaped, dark green, and glossy, with serrated edges. The small yellow-green flowers appear in late spring, followed by orange-red, edible fruits. The flesh of the fruits is sweet and juicy and can be eaten raw, cooked, or dried. In some areas, the fruits are used to make jams and jellies. The wood of the American persimmon tree is hard, strong, and durable, and is often used to make furniture and flooring. The inner bark is also used medicinally to treat a variety of ailments.
Cultivated for fruits, the tree grows wild. Attaining the largest size in terms of height, the fruit is a globular berry which ripens in late autumn. Just about 1 to 2 inches in diameter, it is made into persimmon puddings, cookies, cakes, custards, ice creams, sherbets, and preserves.
