Cucumber belongs to the family of zucchini, pumpkin and other squashes. Its outer color is dark green and inner flesh color is light green. There are two types of cucumber “Slicing” and “Pickling”. Group of compounds found in cucumber called cucurbitacins.cucurbitacins A, B, C, D and E have all been identified within fresh cucumber.
