Carrot Pineapple Muffins-Fruit Recipe

  • 1 cup of sugar
  • 2/3 cups of vegetable oil or canola oil
  • 2 eggs
  • 1 teaspoon of vanilla
  • 1 1/2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • 1 cup of grated carrot
  • 1 cup of drained crushed pineapple

Instructions

1. Stir together with sugar and oil and then stir in the eggs until it gets mixed up well.
2. Stir in vanilla and in a separate bowl, combine flour, baking powder, baking soda, cinnamon and salt.
3. Add some sugar mixture and stir it well until it gets combined well.
4. Put some carrots and pineapple just until combined.
5. Spoon into greased muffin tin filling up to top and then bake in a preheated oven at 375 F for about 20 minutes.
6. Allow it cool down for 5 to 10 minutes, then remove it from the rack to be served.

Even though there are many vitamins and minerals found in carrot, it is difficult for kids to consume them. But kids will definitely love to eat muffins and you can also add some crunchy almonds on its top to make it mouth watering..!!
