Lemon Chicken with Spinach Parmesan Crepes-Fruit Recipe

Lemon is fruit packed with numerous vitamins and minerals and it is a fruit which is less in calories. They are available in abundance throughout the year and they are a good source of dietary fiber. It contains citric acid which produces lot of antioxidants and prevents from oral cavity cancers.

This recipe is loved by all ages as chicken is involved in it and spinach is also considered to be one of the important healthy ingredients. Almost every parent prefers doing this recipe for their kids as an evening snack.

This recipe takes only few minutes for preparation and it is for the ones who have a hard time with leafy greens. This can also be served for meal during summer and the ingredients needed for this recipe and the procedure to prepare this recipe is given below.

Ingredients

Filling:

  • 1 small diced onion
  • 2 minced or crushed garlic
  • 1 sliced lemon (Rind and pith cut off)
  • 1 pound of chicken thighs(chicken drumstick)
  • Handful of sage leaves
  • Salt and Pepper
  • 1 cup of Ricotta cheese

Crepes:

  • 1 cup of milk
  • 1/2 cup of all-purpose flour
  • 1/4 cup of whole wheat flour
  • 1/4 teaspoon of salt
  • 2 eggs
  • 1 cup of baby spinach leaves
  • 3/4 cup of grated Parmesan cheese

Instructions:

Filling:

  1. Layer onion and garlic on the bottom of the slow cooker and then place the chicken on top of onions and garlic.
  2. Spread sage leaves and lemons slices on top of chicken and add salt and pepper if desired.
  3. Cook on high for 4 hours or low for 6 hours and when the chicken mixture is done, remove it from crock-pot and place in a bowl.
  4. Now mix the shredded chicken with ricotta cheese and spoon onto crepes and serve.
  5. Blend all ingredients which are mentioned in the crepes ingredient list together until it becomes smooth.
  6. Heat a skillet until a little water sizzles when dropped on it and spray pan with cooking spray. Pour a small amount of batter into skillet, tilting pan so batter spreads evenly in the pan.
  7. Cook until it has become brown on underside and then remove it from pan and allow it to cool on wire rack. Repeat with rest of batter, to make about 12 crepes.

Crepes:

One can also make crepes with different vegetables like carrot, cauliflower broccoli, zucchini and any leafy green. If one does not want thick crepes they can add a little bit of milk to make them thin. Just try out this recipe and know for yourself the excellent delicious taste of the same.
