Ingredients:
– 2 cups all-purpose flour
– 2/3 cup sugar
– 2 teaspoons baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1/4 teaspoon ground cinnamon
– ¾ cup soy milk
– ¼ cup vegetable oil
– ½ cup mashed banana (1 medium banana)
– 1 egg
– 1 cup fresh blueberries
Instructions:
– Combine in mixing bowl flour, sugar, baking powder, baking soda, salt and cinnamon.
– Combine in second mixing bowl soy milk, vegetable oil, mashed banana and egg.
– Add blueberries to flour mixture and toss to coat.
– Add liquid mixture to flour mixture and stir to moisten all ingredients.
– Fill greased or paper-lined muffin about three fourths full.
– Bake at 400 degrees F. for 18 to 20 minutes or until wooden pick inserted come out clean. Makes 12 muffins.
