Ingredients
- 1/2 small head finely shredded cabbage (about 4 cups)
- 2 small peeled and shredded carrots
- 3 green thinly sliced onions,
- 1 small sweet bell pepper
- 3/4 cup of Sun-Maid Natural Raisins
- 1/2 cup of cubed fresh or frozen, thawed mango
- 1/2 cup of cubed fresh or frozen, thawed papaya
- 1 tablespoon of sugar
- 3 tablespoons of extra virgin olive oil
- 2 tablespoons of fresh lime juice
- Chopped cilantro leaves for garnish
Instructions
- In a large bowl combine cabbage, carrots, onions, bell pepper and ¼ cup of raisins, mango and papaya.
- In a small bowl mix sugar, olive oil and lime juice and add to the vegetables and fruit and mix thoroughly.
- Pour the mixture into a serving dish and garnish with cilantro and remaining raisins.
