Ingredients:
- 3 Eggs (only the white)
- 1/2 cup of honey
- 1 teaspoon of vanilla
- 3 tablespoon of oil (canola or vegetable oil)
- 1 cup of chopped dried dates (or any dried fruit)
- 1/4 teaspoon of salt
- 2/3 cup of whole wheat flour, or white flour and whole wheat flour mixed
- 1/4 cup of chopped nuts
- 1/4 cup of rolled oats
- 1/2 teaspoon of ground cinnamon
Instructions:
- Beat the eggs whites until stiff peaks are formed.
- Add remaining ingredients and stir until the mixture is well mixed.
- Pour it into 8X8, well greased cake pan.
- Bake at 350 degrees for 25 minutes and allow it to cool down for some time.
