Pineapple-Black Bean Enchiladas

Pineapples are storehouse of many health promoting vitamins and minerals like manganese, copper, folates, thiamin, riboflavin and so on. It is low in calories and does not contain any saturated fats or cholesterol. Some research has shown that consuming pineapple helps fighting against arthritis, indigestion and worm infestation. Ingredients

  • 2 teaspoons of  vegetable oil
  • 1 cup of large yellow chopped onion
  • 1 cup of medium red bell chopped pepper
  • 1 can of drained pineapple tidbits
  • 1/3 cup of pineapple juice
  • 1 can of progresso black beans
  • 1 can of old el paso chopped green chilies
  • 1 teaspoon salt
  • 1/2 cup of chopped fresh cilantro
  • 3 cups of shredded low-fat cheddar cheese
  • 1 can of Old El Paso mild enchilada sauce
  • 8 whole wheat flour tortillas
  • 1/2 cup of reduced-fat sour cream
  • 8 teaspoons chopped fresh cilantro

Instructions

1. Heat the oven to 350 F and in a 12 inch nonstick skillet, heat oil over medium heat and add some onion and bell pepper to it.

2. Allow it to cook for 4 to 5 minutes and stir on pineapple, beans, green chilies and salt.

3. Cook and stir until it is heated and remove it from heat to add ½ cup of cilantro and 2 cups of cheese.

4. Onto each tortilla, spread 1 tablespoon of enchilada sauce on them and add the vegetable mixture over the sauce and roll it up tightly.

5. In a small bowl, mix pineapple juice and the remaining enchilada sauce and pour them in dish. Sprinkle some cheese on it and spray sheet of foil large enough to cover the baking dish with cooking spray.

6. Bake it for 35 to 40 minutes and gently remove the foil in the last 5 to 10 minutes of baking until the cheese is melted and sauce becomes bubbly.

7. To each baked enchilada, add 1 tablespoon of sour cream and cilantro before serving.
